About This Coffee
It’s impossible to account for a coffee’s flavor without also thinking about the water used to nurture, process, and brew it. For those days when your cup’s deliciousness feels ineffable, no Heraclitean adage will satisfy your urge to explain. We recommend, instead, that you simply enjoy.
Along with Gikirima, who we’ve been buying from for four straight years, Gicherori is one of the five stations that make up the Kibugu Farmers Cooperative Society. From its hillside perch, producers draw water from a nearby spring to process cherry, after which they sort it by hand. Because this coffee is vacuum-packed to preserve every last volatile compound, that springwater freshness—along with a rarefied citrine sweetness—shimmers in every cup.
