About This Coffee
This coffee, as rare as the creature for which it’s named, comes from a mutation of Parainema—an unknown cultivar until just a few years ago. The fruit is uniquely long and pointed, and though finicky to roast, the perfumed aromatics of the finished cup are enough to persuade any farmer into trying their hand. This microlot, which Benjamin Paz and Elias Meza planted high on Santa Bárbara Mountain, is in its second harvest. The collision of unusual genetics with extreme weather stresses the cherry to become a coffee that’s like a love child of craft and terroir: invigorating, brisk, and hopelessly floral.
