About This Coffee
Grown on the renowned Santa Bárbara Mountain, this aromatic coffee demonstrates the miracle that’s possible when a cultivar finds its ideal climate. The cultivar’s official name is Parainema. It was developed in Honduras for its disease resistance. But its beans are also oddly pointy. Noting the unusual shape, farmer Benjamin Paz isolated the cultivar on Eulogio Martínez’s farm and found the resulting coffee magnificently perfumed. They submitted the Parainema to the Honduras Cup of Excellence in 2015, and it won first place. Benjamin then planted it on his own farm, La Laguneta, and has found it flourishes in its extreme conditions. When deftly roasted, the coffee is brisk like the mountain air, and yet soft with a romantic florality.
