Tana Toraja

We're excited to share with you our first ever release from Indonesia. Unlike many coffees from Indonesia that are processed in the Giling Baseh (or "wet hulled") style - which very often introduces off-flavor defects and sacrifices cup quality - these coffees washed and sorted at the Toarco Padamaran mill are treated to a careful milling more akin to what we find in Central America. This better showcases the lovely intrinsic character of the locally cultivated Djember variety. This Tana Toraja makes a delightful cup, with bartlett pear serving as the flavor backbone for a brew that opens up to reveal a bit of raspberry and cane sugar.
