Once known for its pleasant everyday coffee, Honduras has rewritten its reputation in recent years as farmers such as Ana Letis Reyes produce show-stopping single origins. Hers is one of the highest farms on Santa Bárbara Mountain. On the peak, frigid mountain air meets with the humid updrafts coming from Lake Yojoa below, creating just enough warmth for the local Pacas coffee cherry cultivar to ripen at a snail’s pace. A Bourbon mutation, Pacas is known for its sweetness. But the magic of Ana’s farm pushes the fruit into uncharted territory, creating this kaleidoscopic single origin.
