When he started growing coffee on this 3 hectare farm back in 1996, he was committed to proper management of his trees and special care of his coffee through the milling processes. Through the use of manual depulping and very careful monitoring of the fermentation and washing, Amado achieves a spectacular clarity in his coffees.
