Colombia Yacuanquer Constellations
Some single origins find focus through just one kind of processing. Others, like this coffee from the high-elevation town Yacuanquer, achieve nuanced layers because there are two kinds of home-processing at play. Selected farmers from the Café Occidente Cooperative contribute modest yields of coffee. Some farmers dry their cherry whole, beneath the sun, while others wet process their harvest. When blended together, two different shades of the same volcanic terroir merge into a coffee that’s as glinting and mesmerizing as a constellation in the autumn sky.
