Aguilera Bros Micromill
A revolution in smaller scale micro-milling in Costa Rica has lead to the development of higher quality and unique small lots of coffee and helped smaller producers to exercise more control over the business of their farms. This coffee from the Aguilera Brothers mill in the west valley is primarily Villa Sarchi varietal processed in the "yellow honey" fashion, in which a bit of residual pulp is left on the beans during drying leading to a very sweet, mellow coffee with great body. Expect doughnut glaze sweetness, dried figs, molasses, and a long lingering finish. Flourishes in a filter, is plump in a presspot, and makes for a remarkably expressive espresso.
