On the southern slopes of the Antigua Valley, just off Volcan de Agua, Ricardo “El Tigre” Zelaya is growing some of the best coffee in Guatemala. A well-studied agronomist and fourth-generation coffee farmer, Ricardo was able to stave off the aggressive coffee leaf rust that adversely affected almost all of Central America, leading some countries to declare a state of emergency. Relying on tasty, heirloom varieties like Bourbon and Caturra, an abundance of shade, and proven processing techniques, it’s no surprise that Ricardo has won numerous awards for his superb coffee. Santa Clara is for the sophisticated drinker, and is as elegant as coffee gets, with a juicy, smooth body and flavors of dark chocolate, raspberry, lavender, and a hint of candied orange peel.
